Partial-Oxidized Oolongs
No doubt partial oxidized tea, i.e. Oolongs of various oxidation degrees, are the most sophisticated tea to produce in that constant monitoring and precision in controlling the oxidation degree are fully required to avoid over, under or un-even partial oxidation. Tea masters’ sitting up overnight is already necessary to make sure the precise leaf-edge only oxidation and the precise timing of green note turning into floral smell. Among all oolongs, there are Wenshan Pouchong, Dong Ding Oolong, High Mt. Oolong, Four Seasons Oolong and last but not least, the best known Oriental Beauty and Tie Kwan Yin roasted or non-roasted and also the East Coast Dark Pearl Oolong, DPO.
